In Celebration of Giving...A New Direction

I've been a little quiet on the blog lately as I've been trying to figure out a smooth transition. My gift basket company, Thoughtful Presence, uses an awesome eCommerce platform, called BigCommerce. Not long ago, they added a new built-in blog feature, which we in BigCommerce's world were all super excited about. So as I watched it unfold, and played around with it a bit, I also had to figure out what I would do with this blog, if I transition to the new platform, which would put the blog right on our Thoughtful Presence shopping website. Now without getting into a lot of technical nitty gritty stuff about websites and platforms and shopping carts, I'm here to say we're making the switch.

We've officially moved the Thoughtful Presence gift basket company blog to our shopping website platform. And this blog, as you may have noticed in the header, is now a blog about "A Lifestyle of Giving".

What's the difference? I knew you'd ask :)

Thoughtful Presence company blog will focus on our gift basket designs, products, and all things related to holidays and special occasions. Thoughtful Presence lifestyle blog will focus on celebrating a lifestyle of giving everyday, whether it's party ideas, recipes, or stories about giving. And while I'm crystal clear on the direction of the company blog, I must admit I expect this blog to unfold a little over time. And that includes a bit of a facelift!

So stay tuned and watch us grow. And if you like what we've done here, go check out the
new company blog and subscribe there too. We'd love to have you!

Favorite Spring Cookie Recipe: Cherry Pistachio Cremes

Technically these cookies can be made any time of year and with the right sales pitch, you can convince anyone they are perfect for any occasion! With that said, I first made these last October for my niece's wedding reception dessert table.  They were a hit! Her sister is getting married this June, and also having a dessert table, and I plan to make these again. (If anyone from my family reads this, act surprised...and don't tell Ali!)

So given my October wedding choice and my planned June wedding choice for these cookies, I am here to tell you they are the Perfect Spring Cookie! Seriously, they are deliciously light (think shortbread), and beautifully pastel in color (think pink and green). So if you're looking for the perfect cookie for your Easter table, here it is!

Cherry Pistachio Cremes

Ingredients:
  • 3/4 cup butter, softened
  • 3/4 cup powdered sugar
  • 1 egg
  • 1-1/2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped pistachio nuts
  • Granulated sugar
  • 1-1/4 cups powdered sugar
  • 1/4 cup butter, softened
  • 1/2 teaspoon vanilla
  • 1 tablespoon maraschino cherry juice
  • Maraschino cherries with stems (optional)
Directions:
  1.  In a large bowl, combine the 3/4 cup butter and the 3/4 cup powdered sugar. Beat with an electric mixer on medium speed until well mixed, scraping side of bowl occasionally.
  2. Add egg; beat until combined. Gradually beat in flour and salt on low speed until well mixed. Cover and chill about 1 hour or until dough is easy to handle.
  3. Preheat oven to 350 degrees F. Place pistachio nuts in a small bowl. Shape dough into 1/2-inch balls. Roll each ball in pistachio nuts to coat. Place balls 1 inch apart on an ungreased cookie sheet. Dip the bottom of a glass in granulated sugar and flatten each cookie.
  4. Bake in preheated oven for 8 to 9 minutes or just until edges begin to turn golden brown. Transfer to a wire rack; let cool.
  5. In a small bowl, combine the 1-1/4 cups powdered sugar, the 1/4 cup butter, and the vanilla. Beat in enough of the maraschino cherry juice to make a filling of desired consistency. Reserve about 1/4 of the filling for decorating cookies.
  6. Spread about 1 teaspoon of the remaining filling on the bottom of each of half of the cookies. Top with remaining cookies, flat sides down, pressing lightly together. Before serving, spoon a small amount of the reserved filling on top of each assembled sandwich cookie. If desired, press a maraschino cherry into filling. Makes about 21 sandwich cookies.
This is taken exactly from Bhg.com, and I made no changes to the recipe. However, for my purpose of transporting these to a wedding reception hall for a dessert table, I chose not to add the cream and cherry topping, but just to have plain sandwich cookies, and they were perfect. As you add the maraschino cherry juice into the filling, consider the color you are going for as well. Less juice will make a nice pastel pink. More juice will deepen the color but make sure your consistency doesn't get too thin. Enjoy!

Turning Winter into Spring with Daffodils and Aquamarine

Believe it or not, Spring is a mere 15 days away! With snow still piled high here in the Midwest and temps well below freezing, it doesn't feel like spring at all! But as I was looking for photos to represent the flower of March (daffodil) and the birthstone of March (aquamarine), I felt immediate Spring inspiration by so many beautiful images of yellow daffodils and aqua colored vases.

Add Heart Healthy Meals to Your Day

It doesn't have to be hard, tasteless or boring to add heart healthy meals to your day. It really just takes a little knowledge of what foods are best and a handful of recipes and simple tips.  These are a few of my favorites:

Oatmeal is a great way to start your day! Add some fresh berries and slivered almonds to your oatmeal for a delicious, heart-healthy breakfast.  I love this video from Randa4Health on making a delicious oatmeal trifle with lots of great health tips along the way.

Beans are a super heart healthy food. Fresh green beans and chickpeas are one of my favorites! There are many great recipes for a hearty bean salad that makes a great lunch any day of the week. A favorite of mine is a bit more gourmet, but if you have the time and inclination, try this delicious Chickpea Salad with Tomatoes, Olives, Basil and Parsley from kalynskitchen.com. Go light on the olives to reduce sodium.

Broccoli makes a great stir-fry, either as your main dish or dinner side dish. I love this recipe from SimplyRecipes.com.  It's simple and very tasty.  I also love to add toasted almonds or pine nuts to broccoli stir-fry.

Fish is also a super food when it comes to heart health.  A personal favorite recipe which combines several super foods is this delicious Bistro-style Salmon with Brothy Beans and Spinach. I found it in the Chicago Tribune food guide a couple years ago and have made it twice since.  The second time was just last week.  It's hearty, healthy and comforting - a great winter dish!

Healthy Heart Month - Commit to Exercise!

How many years have you made it your New Year's Resolution to start and maintain a solid exercise plan? Was it on your list this year?  It certainly was on mine, and as of today, February 11th, I am still not solid! If I had a dime for every time I tell myself, "I should work out today," I'd have enough to hire a personal trainer - permanently!

So the story goes, for many of us.  Yet, as I have been promoting my campaign for the American Heart Association this month, I am reminded of the necessity of exercise for long term good health! It's not about being thin or having a model body; it's about living a long healthy life. And that statement right there should make it easier to stick to a plan. Why, you ask?

When we strive to have a model body, we are usually comparing ourselves to some false ideal seen in a magazine. A regular gal like me doesn't have time or money to work with a personal trainer for hours a day, which is what it would take to have a model body! I am a wife, a business owner, and a caregiver.  When do I have time to exercise?  If I strive to be healthy, it doesn't mean hours a day in the gym, but rather a simpler commitment to 30 minutes a day 5 days a week. As a wife, business owner, and caregiver, I truly can commit to 30 minutes a day.

So that covers timing and my "too busy" excuse.  The next hurdle is what do I do in that 30 minutes? Go for a walk? Lift weights? Take an aerobics class?  The best answer is all of the above - on alternate days. I choose my favorite activities, and schedule them on a chart for 5 days each week.  I put it in a prominent place where I'm always reminded to put in my 30 minutes. Like this:
